Gotta love the bounce. Personally, I like the dramatic look with highlights from the sun closed down a bit. Also, try shooting more backlit so his face is evenly shaded. From there you fill in with the bounce. The sky will be more rich and blue as well.
Some settings to think about if you are shooting around mid day. With on camera flash pointed to bounce off reflector. Shoot in high speed flash mode +2 or +3, iso 100, 1/1000 f5.6 or f6.3. Move the reflector close and far from subject to get the right look.
If you can shoot off camera flash with pocket wizard...full power on the flash, iso 100, 1/250 or 1/320 (5d flash syncs at 1/200 so make sure to frame the subject away from the bottom) f8 or f11 if possible.
